山水不同,风味各异。我们耀州的风味小吃――咸汤面,虽不及北京的烤鸭、天津的狗不理包子名气大,可也别有风味,颇受耀县人的宠爱。

大概是因为我们耀州盛产小麦的缘故吧,我们的祖先早在数百年前就创造了这种独特的面条吃法。咸汤面要从前一天晚上做起。用适量咸水将面粉反复揉和好,扯成或宽或窄的面条,煮熟捞出,凉透,拌上熟苹油,储存在盘里。第二天清晨,将下过面的汤烧开,放入食盐、小茴香、大茴香、花椒、胡椒、丁香和桂元等十几种原料配成的调合粉,加上豆腐片和捏碎的豆腐块。将一碗白里透黄的面条,用调好的滚煎煎的汤透几遍,将面透热,浇上原汤,再加上生姜末、生葱(韭)花及油泼辣子,一碗热腾腾、香喷喷的咸汤面就捧在了手中。碗内生姜黄、葱韭绿、油辣红、豆腐白,五颜六色,鲜艳悦目,令人垂涎三尺。这种咸汤面吃起来辛辣出汗,筋韧爽口,令人回味无穷。严冬腊月,当你瑟缩发抖时,一碗咸汤面,保叫你周身透热;盛夏酷暑,当你茶饭不思时,一碗咸汤面,准让你食欲大振。

耀州咸汤面,历史悠久,妇孺皆知。民国初年,县城专营咸汤面的就有十余家。其中,以西街郑王才家做的最好。郑王才死后,其子郑汉杰继续经营,直到解放后公私合营,历经30余年不衰。现在,耀县国营、集体、个体经营的咸汤面馆,仅城关就多达40余家,不论春夏秋冬,生意都一样兴隆。在饭店餐厅林立、山珍海味随处可见的耀县城镇,咸汤面独放异彩,难怪著名作曲家田汉品尝后,夸奖说:“小小耀县威汤面,胜过北京高级饭店。”

我看得很馋,就要了一碗。这一碗一共4个牛肉丸,汤里配着紫菜、蒜蓉和芹菜末。我吃了一口,太好吃了!丸子不会太硬,也不会太软,很有嚼劲。妈妈说,这就是正宗的潮州牛肉丸。

有人说,到潮州一定要吃潮州肠粉。我在广州也常常吃拉肠,但是潮州肠粉跟广州的不太一样。潮州肠粉的皮比较绵,不像广州那样韧而且是透明的,配料除了牛肉猪肉外,潮州肠粉还可以选生蚝、虾或者白菜和金针菇。而我觉得,两地肠粉最大的不同是最后淋的酱料。广州多数是淋香油和酱油,潮州则淋调制后的芝麻酱。当一碗热腾腾、香气四溢的肠粉端上来的时候,我的口水都要流下来了。
