每当春风吹绿了田野边两排树上的嫩叶，在那被油腻浸润了一个冬天的胃开始蠢蠢欲动之时，奶奶就开始忙着准备她的春日菜单。

嘎嘣脆的青瓜

奶奶在家里的阳台上堆了土，开了小渠，初春时便撒上了蔬菜瓜果的种子。待种子冒出尖尖的小芽时，又撒上木糠给它们保暖。

到了雨水充足的春季中期，那些嫩芽便疯长起来。叶子的间隙偶尔会冒出绿色的小青瓜，尾巴上带了一朵黄花，细长的身体上长了一层绒毛。很快，小青瓜变成大青瓜，那些小绒毛都变成了小刺。这个时候，我总会垂涎三尺地抢先摘了一条下来，皮也不削，直接用手撸了小刺就塞进嘴里啃起来。一口清甜鲜脆，满满都是春天的味道。

奶奶将新鲜的艾叶一片片摘下来，焯水后滤干用刀剁碎，放进一个大大的不锈钢盆里，加入清水、糯米粉、酵母一起發酵。面粉在发酵时，奶奶就开始制作馅料。咸馅料主要有：切成粒的咸肉、茭白、腌萝卜干。甜的馅料有：炒熟的芝麻、冬瓜制成的瓜糖块、细白的椰蓉。

每当做艾叶饼时，我都欢天喜地地守在大盆前不肯离开，看着奶奶的一双巧手将一块块面皮变成了一个个胖嘟嘟的艾叶饼，然后它们排着队上蒸锅。

柴火灶的火舌舔着大铁锅的锅底，大铁锅咕噜咕噜地唱着歌，空气里飘着一股艾叶独特的清香。我的心情也在这种烟火气和清香中越来越激动。

当艾叶饼暗绿的身体在蒸汽里显现出来时，我常常忍不住馋，一把抓了一个就吃，又被烫得上蹿下跳。咬一口，整个口腔鼻腔都是浓烈的艾叶香。馅料或咸鲜或沙甜，吃完后齿颊留香。

锅烧热，下一勺油，爆香蒜蓉辣椒圈，将鱼干下入油锅里微煎，那鱼肉与热油接触的嗞嗞声，那空气里热辣呛鼻的辣椒香，勾得我口水直流。

鱼干煎得微黄时，舀一勺黄豆瓣酱，再撒一把香菜就可以起锅了。那些微微带着韧劲的鱼肉非常有嚼头，咬一口，香辣酥脆，仿佛将那股溪水的清冽都摊开在舌尖上。

偶尔奶奶还会在烧饭时摊几个鱼干在热烘烘的灶台上，饭烧好了，鱼干也烘好了，又是一道美味的零食，味道是那些加了很多味精的鱿鱼干无法比的。

酱汁田螺

村子里的田洼边有一条清澈见底的小溪，溪水不算深，经常有顽皮的小孩子在里面捞鱼摸螺，不用半天就能摸满满一桶。

奶奶把那些摸来的田螺，放在清水里养两天吐净沙子，用螺丝刀剪去尾部，洗净。加一把蒜蓉、辣椒下热油里爆香，再倒入田螺，翻炒片刻，加入紫苏和一把蒜叶，很快整个厨房里都是紫苏独特的香气。

奶奶说，紫苏不但祛除了田螺的泥腥味，还带出了田螺的鲜味。夹起一个田螺放进嘴里，轻轻一吸，一股鲜辣的酱汁冲到了舌尖，其中还有紫苏的香味，也有蒜蓉的香味，瞬间整个口腔就像一个香气聚集地。

吸完了酱汁，再用力一吸，田螺肥嫩的身体就被吸出来了，口感爽滑而又有弹性，让人吃了一个就不想停下来。

偶尔放学回来掀开饭桌盖子，我会不满地问：“今天没啥菜吃？”

奶奶慢条斯理地应一声：“怎么没菜吃？到处都是菜。”说完她去菜地里揪一把嫩得出水的荠菜回来，再磕两个家里***鸡下的鸡蛋，搅拌一下就下了锅。荠菜清香，鸡蛋鲜嫩，不失为人间鲜味。
